So what’s your poison this Valentine’s Day? Sure you could go with the obvious – champagne, wine or even beer but isn’t that a little boring and quite frankly, predictable? I am feeling a little adventurous this Valentine’s Day and professing my love of Rumchata with this Rumchata Raspberry Cream Cocktail.
In my circle Rumchata is the hot liquor of the moment. We love it. We drink it. We dig it. I regularly whip up Rumchata martinis, Rumchata on ice and Rumchata Hot Chocolate and all of them have been crowd pleasers.
This year we are having Valentines “in.” My boys just celebrated their birthdays and we are having their birthday party on Valentine’s Day. By the end of the day we will be wiped out. Instead of forcing ourselves to go out, we are going to do Valentine’s Day at home, enjoying a beautiful dinner and sipping on a few cocktails.
For our cocktail of choice I decided serve a Rumchata Raspberry Cream Cocktail. For this cocktail Rumchata is mixed with some muddled raspberries, light cream and raspberry vodka. The result is a beautiful, delicious tasting cocktail that screams romance. The muddled raspberries flavor the cocktail with that fresh fruit taste and create a romantic, heart-themed cocktail as the raspberry pieces float to the top like floating hearts.To garnish, you can thread several raspberries through a red cocktail stirrer and place on top of the glass.
- 1 tablespoon of fresh raspberries
- 3 ounces of light cream
- 2 ounces of Rumchata
- 1 ounce of Raspberry Vodka
- Fresh raspberries for garnish
- Place fresh raspberries in the bottom of a cocktail glass and muddle. In a cocktail shaker, add the light cream, Rumchata, and raspberry vodka over ice and shake. Add ice to cocktail glass on top of raspberries and strain liquor mixture over muddled raspberries. Garnish with fresh raspberries and serve.
