I remember the first time I met my Lauryn.  I immediately knew I wanted to be her friend.  She has such a welcoming personality and is just the sweetest person – ever! Lauryn started blogging around the same time I did and her site, The Vintage Mom, is filled with original recipes, homemade items and great organization tips.  Lauryn likes to describe herself as an old-fashioned girl in a modern world. She is so great and today she is sharing an amazing recipe for Vanilla Chocolate Chip Frosted Brownies.  We are so lucky to have Lauryn taking over GGG today!

Until now, you thought the question was…Are you a corner piece person or not when it comes to brownies.

Now, the question becomes…are you a chocolate brownie person or vanilla!

Up until this moment I, without a doubt, would have answered chocolate brownies with chocolate chips please! Or better yet, frosting on top too (I’m an icing girl) – the more the better. And then…I made a Vanilla Chocolate Chip Chocolate Frosted Brownie and my life was forever changed.

You see, your taste buds just aren’t prepared for what is about to happen and that makes it even better! My kids are so excited to have a “new” kind of treat and we have been eating them non-stop ever since. What?? I have to take pictures of course!

So let me introduce you to the Vanilla Chocolate Chip Frosted Brownie.

** Two important tips to keep in mind: 1. DO NOT beat your eggs a lot. When dry ingredients are added, just fold in until moistened. Don’t over stir or your brownies will turn too cakey. 2. Increase your flour to 3/4 cup instead of 2/3 if you want a more “cake-like” brownie:)

Start by greasing a 9×9 glass baking dish. I use butter:) Preheat the oven to 350 degrees.

Mix together eggs, butter (softened), sugar, and vanilla.

Add in flour and salt.

Pour into baking dish.

Pour chocolate chips over top and gently swirl into batter. **This prevents them from immediately settling at the bottom of the baking dish.

Bake at 350 degrees for ~35 minutes until done.

If you like frosted brownies, whip up some Chocolate Buttercream Frosting and lather it on when brownies are cool (see recipe below).

Vanilla Chocolate Chip Frosted Brownies

Prep Time10 minutes

Ingredients

Brownies

  • 1/2 cup butter softened
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup sugar
  • 2/3 cup flour can be made 3/4 cup if you like brownies more cake like
  • 1/4 tsp salt
  • 3/4 cups chocolate chips

Icing

  • 1 1/2 cup powdered sugar
  • 3 Tbsp melted butter
  • 3 Tbsp milk
  • 1 tsp vanilla
  • 1/2 cup cocoa

Instructions

  • 1. Grease 9x9 glass baking dish and preheat oven to 350 degrees.
  • 2. Mix together butter, eggs, vanilla, and sugar. Do not beat or over stir.
  • 3. Add flour and salt and mix until just incorporated.
  • 4. Spread in baking dish.
  • 5. Pour chocolate chips on top and swirl with a knife gently until they are mixed into batter.
  • 6. Bake for 35 minutes or until a toothpick comes out clean when inserted.
  • 7. Mix together ingredients for icing and spread on top if desired!
  • 8. ENJOY!!

  1. This is not the type recipe I was expecting for the brownie part. Actually it was a nice surprise. I know you titled it ‘vanilla’ but I was only thinking about the frosting. I am not a big brownie fan, so this one is more appealing to me.
