Are you ready for back-to-school? We are so excited here. We are heading back this week and after an action-packed Summer, we are looking forward to the structure and discipline the school year provides. One of the things I am slightly worried about are the daily lunches. The boys’ appetites took a huge spike over the Summer and I’m worried that my standard go-to lunches will no longer do. I’ve been thinking of different things I can pack in their lunches and came up with a portable tuna melt – a tuna melt wrap!
To prepare the tuna melt wrap I mixed Bumble BeeĀ® Solid White Albacore Tuna with a small amount of mayonnaise, salt, pepper and chives before spreading it on a lavash wrap.

I then topped the tuna salad with my perfect Jersey fresh tomatoes before topping the tomato with nice chunks of cheddar cheese.
After all of my fillings and toppings were piled on, I rolled the lavash tightly to create a wrap.
With the prep finished I placed the wrap on a small baking pan and baked in my toaster oven for 5-7 minutes to until the lavash was lightly browned. After removing from the toaster oven I cut the tuna melt wrap in half with a serrated knife and served it with fresh strawberries and sugar snap pea crisps.
If I was planning on putting this in my boys’ lunch boxes I would wrap it tightly with aluminum foil before placing in a thermos or container.
