If you catched my latest Dishing with Linda from last week then you’ll know I am in complete summer mode. I’ve been feasting on lighter fare and enjoying the tons of vegetables I am getting from my CSA (Community Supported Agriculture). With the hot weather comes a lack of desire to cook which is why I am totally crushing on this Fish Taco Tuna Salad. I love fish tacos but don’t always love making them – especially when it’s hot out or I am pressed for time – which is why this Fish Taco Tuna Salad is my new #1 fave. It uses up lots of vegetables from my CSA, is ready in no time and is lighter, fresher take on one of my favorite meals.
For this dish I used Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil. Bumble Bee® Prime Fillet® Gourmet Flavors Albacore Tuna combines the highest quality albacore tuna with the finest, restaurant-inspired ingredients. Convenient and nutritious. Available in 2.5oz pouches or 5oz cans and in a variety of flavors including the Jalapeños and Olive Oil (like I used), or Sundried Tomatoes & Olive Oil and Chipotle & Olive Oil.
To begin preparing my Fish Taco Tuna Salad I arranged all of the ingredients I would need. For my salad I used half romaine/half shredded cabbage as my salad base. I then included other fresh vegetables like matchstick carrots, sliced scallions, chopped red onion, sliced radishes, sliced jalapeños, sesame seeds and tortilla strips before topping with the Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil and a Sriracha-Ranch dressing.
Once the ingredients were prepped I could then begin preparing my salad. I put a base of romaine and cabbage in my container and began placing the other ingredients on top. I like to present my salads as pictured below, lining up the ingredients, but this is totally optional. You could also toss all of the ingredients before topping with the tuna, tortilla strips and sesame seeds.
- 1 (2.5 oz.) Pouch or 1 (5 oz.) Can, drained - Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil
- 1 1/2 cup lettuce/cabbage blend
- 1⁄4 cup diced red onions
- 1/4 cup matchstick carrots
- 1/4 cup sliced scallions
- handful sliced fresh jalapeños
- handful of radish slices
- Tortilla strips and sesame seeds as desired to garnish
- Sriracha-Ranch dressing
- Drain tuna and set aside. Arrange lettuce and cabbage mixture on a plate or in a container. Top with remaining vegetables.Put tuna on top of lettuce. Top with tortilla strips and sesame seeds. Drizzle with dressing.
I just love how colorful this dish looks and thanks to my handy little container, I can take this salad with me just about anywhere. It travels well, and if kept cool, can easily be enjoyed on the beach, outdoors on a picnic or even in your car for a quick and easy lunch.
