Memorial Day is just days away and you have probably thought about everything for your barbecue. The hot dogs, hamburgers, buns and sides. But, have you thought about your Memorial Day Dessert?
When you think of dessert does cheese come to mind? Frankly, I think about cheese ALL THE TIME but not so much when it comes to my desserts. So when the fine folks at Cracker Barrel asked me to share this recipe with you guys, I was intrigued and thought it sounded pretty darn good.
Cracker Barrel is one of those iconic brands with a long history – almost 60 years! Recently, the brand was honored with several global cheese award distinctions, most notably Best in Class for Sharp Cheddar at the 2012 World Championship Cheese Contest for their Aged Reserve and also placed best in class in the medium cheddar category with its sharp cheddar and second runner up in the entire competition at this year’s U.S. Championship Cheese Contest® in Green Bay, Wisconsin.
Did I tell you how much I love cheese?
For this Memorial Day Dessert recipe, you will need to pick up a block of Cracker Barrel Vermont Sharp-White Cheddar Cheese. The one with the green label. Part of the reason why I wanted to try this recipe is because this is my favorite type of cheese from Cracker Barrel. It’s so good. Seriously, I wasn’t lying when I said how much I love cheese.
The recipe is so simple and presents so well. Better yet, it tastes really good. Ready for it? Memorial Day will be here before you know it. Let’s get to it.
Red, White and Blue Cheddar and Ice Cream
Ingredients
- 1/2 cup diced strawberries
- 1/2 cup blueberries
- 1 tsp. fresh lemon juice
- 1 TBSP. sugar
- 4 oz. 1/2 of an 8 oz. pkg Cracker Barrel Vermont Sharp-White Cheddar Cheese
- 1 1/2 cups vanilla ice cream
- 10 sugar cones
Instructions
- Mix the first four ingredients together in a small bowl. Cover and refrigerate for at least 30 minutes. Break each of the ice cream cones in half, lengthwise. Reserve any crumbs for another use. Arrange all items on a serving platter.
- To prepare as bite sized treats, use a tablespoon measure to pre scoop the ice cream onto the sugar cone pieces. Please them on a baking sheet and put them in a freezer until ready to serve. Finish by adding slices of cheese and berries.
Notes
BONUS: Another great way to use Cracker Barrel cheese for Memorial Day is to dice up fresh strawberries and blueberries and arrange with Cracker Barrel cheese. Arrange in the shape of an American flag or create your own patriotic design. This is a fun way to get the kids involved and I am certain my two little budding chefs will have fun creating our special Memorial Day snack.
