Loaded Sweet Potato Banana Walnut Breakfast Recipe

Today I am sharing my favorite Loaded Sweet Potato Banana Walnut breakfast recipe. This is one of those dishes that I created on a whim and I am now obsessed with it and can’t get enough.

A few weeks ago California Walnuts contacted me and asked if they could send me some walnuts. Since we are huge fans on nuts in this house I graciously accepted the offer and within a few days a sack of walnuts appeared at my doorstep. The package included a fantastic recipe book and a handwritten note (I love handwritten notes). The note mentioned that walnuts are best stored in the refrigerator to maintain their freshness. I was so appreciative of this tip as I normally stored my walnuts in the pantry. To think I’ve been wrongly storing my walnuts all along did not sit well with me. If you knew me you would totally understand why I fretted over poor walnut storage. Oh the horror!

Walnuts are so nutritious. They are filled with antioxidants and have a nice dose of phosphorus, protein, fiber and magnesium. Walnuts are the superstar of this dish for sure – and for good reason.  

Loaded Sweet Potato Banana Walnut Breakfast Recipe

With my supply of walnuts in hand I decided to keep the recipe simple and filled with some of my favorite ingredients. To begin, I baked a sweet potato until it was soft and cooked all the way through. I then grabbed a banana, some coconut oil and cinnamon.

I added a tablespoon of coconut oil to the inside of the sweet potato. I then sliced up half of a banana topped it with a handful of walnuts and generously sprinkled with cinnamon.  The coconut oil melted throughout the sweet potato and added a light hint of coconut flavor to the dish. Coconut oil is another amazing super food. If you have not incorporated it into your diet yet you should definitely start. I use it for everything.

The result was a deliciously satisfying Loaded Sweet Potato Banana Walnut breakfast recipe that was literally ready in minutes. This dish could also be a great snack and would be perfect for a pre-workout meal to make sure you have the energy and nutrients to finish strong.

  1. OMG a new idea for a relatively simple breakfast that works out just Jim Dandy for a single person who has to hurry off to work. I am jazzed. To start off if California Walnut people want another endorsement—-I am climbing on board for that train. I love walnuts. I buy walnuts, walnuts and more walnuts. In fact it’s my nut of choice. You might say I am a walnut nut. Yes, I am chuckling at my own lame pun.
