Break out the sliders and brats and plan the perfect football menu with a side dish that shines on its own, a football-inspired Jalapeño Popper Potato Salad.

Well, we are deep into football season this year! We have many of our football favorites on heavy rotation, including Sriracha Chicken Dip, wings, chilis and nachos.

But, what about football sides?

We love a good burger or brat during football season and while chips are always on the menu, sides are just as important. We are big fans of salads of all kinds including traditional green salad, potato salad and pasta salad.

This Jalapeño Popper Potato Salad is based off the popular football appetizer, jalapeño poppers. And, let me warn you, because this side dish will easily steal the spotlight on your game day menu.

Jalapeño Popper Potato Salad

INGREDIENTS

  • 3 pounds small golden potatoes (I use the microwave steam bags)
  • 1/2 cup diced cooked bacon.
  • 1/4 cup diced red onion
  • 1/2 cup mayonnaise
  • 1/2 tsp. garlic powder
  • 1/4 – 1/2 tsp hatch chile seasoning (based on taste preference)
  • 1 tsp. ground black pepper
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1/4 cup fresh diced jalapeno peppers
  • 1 cup shredded Mexican 4-cheese blend
  • 6 slices bacon, cooked and crumbled
  • 1 fresh jalapeno, thinly sliced

DIRECTIONS

Prepare potatoes as directed . Let cool.

In a small bowl, stir together mayonnaise, garlic powder, cumin, salt, hatch chile seasoning and pepper.

Dice the potatoes. Add the potatoes, jalapenos, onions, shredded cheese, and crumbled bacon, in a large bowl. Toss to combine. Add the sauce mixture. Toss to combine again. Sprinkle fresh jalapeno slices on top.

Lastly, cover with plastic wrap, and refrigerate until ready to serve.
