A few weeks ago, I walked into one of my favorite produce outlets for a few quick ingredients and was immediately side-tracked by the sight of green grapes.  But, these weren’t just any green grapes, this was an entire case of green grapes for a ridiculous price of $3 per case. For a moment, I hesitated.  What the hell was I going to do with a case of green grapes?  Do you know how many grapes come in a case?  But, the frugal shopper in me couldn’t resist and I used the tempting purchase as a challenge to create something different with the grapes.

Upon returning home, I unpacked the case of grapes and began developing a plan.

First, I washed several bunches and placed them on a easily accessible shelf in the refrigerator so the boys could help themselves to a quick and healthy snack.  I then began incorporating the grapes into everything and anything I could.  We had grapes in our lunch boxes.  I made green smoothies which included bananas, spinach, kiwi and green grapes and I left out cheese and fruit trays to help squash the pre-dinner munchies.   

And then, it came to me.  I could make green grape salsa.  

Within moments of mixing, chopping and prepping, I had an incredibly tasty, original salsa.  It was pure genius.  I loved the freshness of this green grape salsa – the combination of the semi-sour grapes, the tanginess of the tomatillo, the heat of the jalepeno, the punch of the red onion and the spice of the cilantro are really the perfect combination and a great way to use up the ton of green grapes I had on hand.  Even my husband, who despises fruity salsas, couldn’t resist this green grape salsa.

 The recipe for this green grape salsa couldn’t be any easier.  Here it goes.

Green Grape Salsa

Prep Time5 minutes
Cook Time10 minutes

Ingredients

  • 2 cups of sliced green grapes
  • 1 cup of chopped cooked tomatillos
  • 1 small chopped jalepeno
  • Half medium red onion chopped
  • Handful of cilantro chopped
  • 1 teaspoon of salt
  • 1/2 teaspoon of onion powder
  • Juice from half a lime

Instructions

  • Combine first four ingredients in a bowl and mix. Add cilantro and spices, gently mix. Squeeze half of lime onto green grape salsa and gently mix again to incorporate. Serve with tortilla chips.

Notes

Jalepeno can be deseeded to reduce heat. Adjust salt to taste.
