Sticky Peach Mango Chicken Skewers

Ingredients

  • 2 lbs boneless, skinless chicken breast cut into pieces
  • 1 16 oz. jar Desert Pepper Trading Company Peach Mango Salsa
  • 3 oz chopped cilantro, for garnish
  • 1 sliced green onion, for garnish
  • limes wedges optional
  • chips and salsa to serve optional

Instructions

  • Blend one 16 oz jar of Desert Pepper Trading Company Peach Mango Salsa
  • Add the chicken to a bowl and pour the blended mixture over chicken and marinate for two hours
  • Remove the chicken and thread on skewers
  • Pour the leftover marinade into a saucepan and boil for 2-3 minutes, stirring frequently
  • Grill skewers on medium heat, turning frequently for 10-15 minutes until chicken is cooked thoroughly.
  • Baste with marinade as you grill.
  • Garnish with chopped cilantro and sliced green onion
  • Serve on a platter with lime wedges, chips and salsa on the side
