Roll the thawed pie crusts into a circle the size of your pizza pan and place it on a greased pizza pan.
Fold the edges over slightly to create a rustic crust
Prepare the filling by beating together the cream cheese, Greek yogurt, sugar, egg yolk, and vanilla until smooth.
Spread evenly over the crust, leaving a 1-inch border like you are making a pizza
Prepare the peaches by tossing them with the brown sugar, cornstarch, and cinnamon. Arrange them in overlapping circles over the filling.
Bake for 30–35 minutes, until the crust is golden brown, the peaches are tender, and the filling is set.
Whisk together the powdered sugar, milk, and vanilla. Drizzle over the warm pizza pie before serving.
