I had a craving for something seasonal. I enjoy all things fall. But, I’m not a fan of the pumpkin spice overkill that happens this time of the year.
While at the produce market they had beautiful bags of apples available to purchase. I grabbed a large bag of golden-delicious apples with the idea that I would whip up something great. I have always been a fan of the peanut butter-apple combination and used that as the inspiration for these Peanut Butter Caramel Apple Cookies.
How to Make Peanut Butter Caramel Apple Cookies
To make these delicious cookies, I used a crisp peanut butter cookie as my base. The cookies were finished by topping them with warm spiced apples and a caramel drizzle.
This recipe starts with a super simple peanut butter cookie. Peanut butter cookies are a quick and easy cookie to bake and mimic that peanut butter and apple flavor combination that I love so much. I think a crisp oatmeal cookie would be great as well.
I then diced up three fresh golden-delicious apples and cooked them in coconut oil, brown sugar, cinnamon and pure vanilla extract. Once the apples were cooked and soft, I added them on top of the crisp, peanut butter cookie and finished with a warm caramel drizzle.

Ingredients
PEANUT BUTTER COOKIES
- 1 stick of butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1/2 cup peanut butter
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
CARAMEL APPLE TOPPING
- 3 golden delicious apples chopped
- 1 tbsp coconut oil
- 4 tbsp brown sugar
- 1 tbsp pure vanilla extract
- 1/2 lemon, squeezed
- caramel sauce for drizzle
Instructions
PEANUT BUTTER COOKIES
- Preheat oven to 350 degrees
- Place butter in a microwave-safe bowl and microwave on high for 30-45 seconds until butter is partially melted.
- Add sugars and egg and stir well. Add peanut butter and vanilla and store until smooth.
- Add baking soda and salt over the mixture and stir well.
- Roll dough into large balls. This recipe is for 12 large cookies.
- Place cookie dough balls 2 inches apart on cookie sheet. Bake for 12-18 minutes or until lightly golden.
- Remove from heat and allow to cool slightly before topping with apples.
CARAMEL APPLE TOPPING
- Chop apples into evenly sized small chunks. Add to pan.
- Add coconut oil to the pan and cook over medium heat.
- Add brown sugar, cinnamon and vanilla extract and cook until apples are soft and coated.
- Once apples are soft, add lemon juice.
- Remove from heat and allow to slightly cool.
COOKIE ASSEMBLY
- Place peanut butter cookies on large serving tray.
- Top eat cooking with 1-2 tablespoons of cooked apples
- Drizzle caramel sauce over apples and cookie.
- Serve slightly warm or warm slightly before serving
