I’ve done it! I’ve turned my all-time favorite appetizer indulgence into something a little different, a Jalapeño Popper Pizza with Cornmeal Crust.
I just love jalapeño poppers but I am a little picky about them. – they have to be crispy and they must have the cream cheese filling. The crispy coating is what inspired me to make a pizza crust using cornmeal. Making pizza with a cornmeal crust is quick and easy. P.A.N. Cornmeal has existed for many years, but is only recently making its way into kitchens in the USA. The cornmeal crust, made with P.A.N. Cornmeal, offers to the perfect sturdy base for this pizza and that crispy crunch I like in my poppers.
There’s nothing quite like discovering a culturally new ingredient that ends up a pantry staple. P.A.N. Cornmeal, a staple ingredient already in most Venezuelan homes is making its debut in the U.S. and proves an ideal addition to any food explorer’s shopping list.
My recipe involves a simple process of combining P.A.N Cornmeal with flour, baking powder, salt and olive oil to create a pizza crust in minutes that doesn’t require yeast or a long time to rise.
I then rolled the crust out into a large circular shape about the size of my pizza pan.
After the cornmeal crust was rolled out I then topped it in layers starting with four ounces of cream cheese, eight ounces of cheddar cheese and sliced jalapeño poppers and baked it in the oven for about 15 minutes before topping with cheddar cheese french fried onions and baking for another five minutes for an extra, added crunch.
The pizza came out of the oven crispy, warm and the pizza was a rich, golden color.
Jalapeño Popper Pizza with Cornmeal Crust
Ingredients
- 1/2 cup P.A.N. Cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup water
- 2 tablespoons olive oil
- 4 ounces cream cheese
- 8 ounces cream cheese softened
- 3 fresh jalapeño peppers sliced into thin rounds
- 3/4 cup cheddar french fried onions
Instructions
- Preheat oven to 400 degrees. Place the cornmeal, flour, baking powder and 1/2 teaspoon salt into bowl. Mix. Make a well in the center and add the water and olive oil. Combine and knead for about 8 minutes until the dough is able to stretch. Allow dough to rest for 5 minutes. Roll out dough into shape of a pizza. Place on pizza pan. Spread softened cream cheese evenly onto crust. Top with cheddar cheese and sliced jalapeño peppers. Bake in over for 15 minutes. Remove from oven, top with french fried onions and bake again for another 15 minutes. Serve warm.
