Heat and grease waffle iron.
While waffle iron is heating, in a large bowl, combine yakisoba noodles, 2 eggs, baking powder, water and nutritional yeast. Mix well.
Fill waffle iron with noodle mixture to make four waffles. You will need a top and a bottom for each sandwich. My waffle iron makes 4 waffles, if yours make 2 waffles at a time, distribute mixture evenly.
While waffles are cooking, pan-fry the spam until lightly browned.
Once the spam is done, you will then cook your egg to desired doneness. I like mine over medium, hard.
Cook noodle waffles until golden brown, flipping if necessary.
While still hot, place one noodle waffle on a plate and top with two pieces of fried spam, one egg and 2-3 sheets of nori or seaweed. Top with second noodle waffle to complete the sandwich. Serve hot.
Optional: Serve with sliced avocado topped with sesame seeds, sliced oranges, parsley garnish and sriracha.
