Chipotle Chunk Light Tuna Tacos

A unique twist for Taco Tuesdays

Ingredients

  • 2 cans chunk light tuna
  • 2 tbs mayonaise
  • 1 -2 tb chipotle peppers finely chopped (depending of how spicy you want them)
  • 20 wonton wrappers
  • 1 cup cole slaw mix
  • bunch of cilantro
  • 1 avocado
  • 3 tbs sesame seeds

Instructions

  • Preheat oven to 350 degrees. Spray baking pan with cooking spray. Drape wonton wrappers along outside of pan. Bake in oven 10 minutes until brown and crisp. Mix tuna mixture in bowl by adding two cans of drained tuna, mayonnaise and chipotle peppers. Mix well. Chop cilantro. Cut avocado into small chunks. Fill each baked wonton with a small amount of cole slaw mix, top with tuna, cilantro and avocado and finish with sesame seeds. Serve and enjoy

Notes

For extra heat, add additional hot sauce to each taco.
