Simple and easy to make, Whoopie Pies from Cake Mix
If there is one thing I have passed down to the GGG boys it is certainly my sweet tooth and love for desserts. So, the other day when my son proclaimed out of nowhere that he wanted me to make Whoopie Pies, I froze for just a second. You see, I know my limits and when it comes to baking – I am good, but not great. My cooking talents lie more within the savory side of cooking where I excel at building flavors and creating unique food combinations. Baking has always been something my sister excelled at more than me.
But, rather than stand in my kitchen frustrated and with flour on my face, I decided to get a little creative and see if I could come up with a short cut and that is where these Whoopie Pies from Cake Mix come in.
What could go wrong, right? I was a kitchen genius!
To start, I grabbed a favorite cake mix and altered the directions. I used the Devil’s Food flavor and combined it with 1/2 cup of coconut oil and 2 eggs to create a very thick batter.
I then dropped large spoonfuls of batter onto a lightly greased (I used baking flour spray) baking sheet about two inches apart.
Once all the batter was depleted, I placed the Whoopie Pies in my preheated oven (350 degrees) and baked them for 10-12 minutes.
I found that I needed to push my whoopie pies down with a large spoon about halfway through the baking process to make sure they stayed nice and flat. Once the whoopie pies were cooled, I topped one side of the whoopie pie with my favorite buttercream frosting (I used a pre-made variety) and then topped it with another whoopie pie.
Delicious Whoopie Pies from Cake Mix made in about 30 minutes. My little dessert lovers were certainly pleased!
I served the Whoopie Pies with a nice glass of cold milk. The boys were in heaven.
Whoopie Pies from Cake Mi
Ingredients
- 1 Box Devil’s Food Cake Mix
- 1/2 cup Coconut Oil softened
- 2 eggs
Instructions
- Preheat oven to 350 degrees. Mix ingredients until combined (batter will be thick). Drop spoonfuls of batter onto the baking sheet about two inches apart. Bake 10-12 minutes and allow to cool. Once cooled, fill with buttercream frosting by spooning a small amount of frosting on the flat side of one cookie. Take another cookie and press together until frosting us spread evenly between both sides and visible from the sides.
Sometimes you have to get a little help in the kitchen. I love that these Whoopie Pies from Cake Mix require very little ingredients or effort without sacrificing on taste.
