 When it comes to vegetables I have to say the GGG boys are pretty good eaters. They embrace brussels sprouts, chomp on asparagus and greet zucchini with great zest, but I know that is not the case for most children. That’s why I was excited to have the opportunity to work on the 13th annual Produce for Kids Healthy Eating Campaign and share these Tuna Broccoli and Carrot Fritters with you.

Produce for Kids campaign, which kicked off on April 24, is a national campaign that raises money for Feeding America and local organizations like the Food Bank of South Jersey. The program offers in-store and on-line meal solutions, recipes and tips for families looking to embrace healthier eating habits. Grocery shoppers are encouraged to purchase more nutritious fruits and vegetables and, in exchange, suppliers will make a donation to Feeding America and other community children’s organizations.  

To help celebrate the Produce for Kids Healthy Eating Campaign, I made these kid-friendly Tuna Broccoli and Carrot Fritters featuring ingredients from Eat Smart Fresh Cut Vegetables, Marie’s Dressings and Bolthouse Farm Juices.

To prepare the Tuna Broccoli and Carrot Fritters, I steamed the Eat Smart Veggies (in the microwave), chopped the broccoli and carrots up and combined them with tuna, flour, Parmesan cheese and eggs to create a veggie-packed fritter batter. I then pan-fried the fritters lightly in olive oil until golden brown and then served them with my favorite dipping sauce.

When paired with fresh grapes and Bolthouse Farms Juices, these kid-friendly meal offers a nice amount of protein, fruits and vegetables.

Grocery retailers participating in the Produce for Kids Healthy Eating Campaign include ACME Markets, Associated Wholesale Grocer’s Major Savings, Advantage, Independent, Country Mart, Homeland and United Divisions, Meijer Stores, Niemann Foods, Inc., Price Chopper, Publix Super Markets; and Roundy’s Supermarkets, Inc. to name a few.

The Produce for Kids Healthy Eating Campaign is supported by more than 35 participating fresh fruit and vegetable suppliers, representing every major category of fresh produce.

Tuna Broccoli and Carrot Fritters

A kid-friendly veggie packed snack.

Ingredients

  • 1 package for Eat Smart Broccoli and Carrot Blend steamed and chopped
  • 1 can chunk light tuna drained
  • 1/2 cup flour
  • 1/3 cup parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 large egg
  • 2 green onions chopped
  • 2 tablespoons olive oil
  • Marie’s Dressings for dip

Instructions

  • Steam broccoli and carrots, drain and finely chop. Place broccoli mixture and flour in a large bowl; stir to coat. Add cheese, salt, pepper, onions,and egg to broccoli mixture. Stir to combine. Heat a large nonstick skillet over medium heat. Add oil to pan and coat. Form small patties with mixture in the palm of your hand and flatten slightly until all of the mixture is gone (about 10 patties). Cook 4 minutes on each side or until golden brown. Serve with dipping sauce and fresh fruit.
