“If you like it than you should have put an egg on it ….” (props if you sang that like Beyonce in your head).

That’s what was running through my head as I was prepping snacks for the Big Tournament games this weekend. I was feeding a crowd so I immediately thought to make a huge batch of nachos. We were coming down from a huge bracket buster game where our favorite, local team was kicked out of the tournament and we needed some comfort food. What is more comforting than a big serving of nachos? To turn it up a bit, I decided to put some runny eggs on top of the nachos to create the ultimate loaded nachos with egg.  

Before my weeknd of big games, I went to my local Walmart to pick up my ingredients. I decided to pick up a few cans of RO*TEL tomatoes to have in my pantry.

Now, when it comes to making loaded nachos for a crowd, there’s only one way to make them – in a large serving platter or pan of some sort. I like to use a large baking dish for my nachos. 

My base is layer of nachos topped with shredded cheese and then top that layer with black beans.

Then, I topped the beans with another layer of cheese, followed by the RO*TEL tomatoes followed by another layer of cheese. Nachos are supposed to be super cheesy, right?

I then placed the nachos in the oven to melt the cheese and warm the beans. Once warmed and melted I added the remaining ingredients including lettuce, guacamole and sliced black olives.

The last step is where the fun comes in. You ready? I prepared three eggs, over-easy, and placed them on top of the super loaded nachos right before serving.

When I placed the platter of nachos down before my guests, they dug right in. Attention went from the big game to the big old serving of loaded nachos with egg. It was almost as the Big Tournament wasn’t on the TV.

A serving of this size served about six adult guests.

The Loaded Nachos with Egg is definitely a great option for a crowd when you are entertaining, like I was for the Big Tournament, or maybe even as part of Tex-Mex brunch menu. Loaded Nachos with Egg

Ingredients

  • 1 large bag of tortilla chips
  • 3-4 cups of shredded cheese based on your taste preference
  • 1 15 oz can of black beans drained
  • 1 10 oz can of RO*TEL tomatoes choose flavor based on preference
  • 1 cup shredded lettuce
  • 1 cup guacamole
  • 1 5 oz can of sliced olives
  • jalapeno pepper slices to garnish

Instructions

  • Preheat oven to 350 degrees. Arrange tortilla chips is large serving pan. Top with 1.5 cups of shredded cheese. Add black beans. Top with more shredded cheese and tomatoes. Bake in oven for about 5 minutes or until cheese if melted. Remove from oven and add remaining toppings including shredded lettuce, guacamole and black olive slices. Prepare three eggs over-easy and serve immediately while hot.
