It’s only the beginning of June and we are already experiencing some pretty warm days here on the East Coast. After the winter we had I am totally relishing in the bright summer sun and rising temperatures. Just this weekend I was grilling out on my patio preparing dinner for my family. The music was blaring, the grill was smoking and I was so relaxed. Then suddenly, I had this overwhelming urge for something cool, frosty and delicious. I went in to my kitchen and bar area and assessed what I had on hand. I had some overripe bananas, coconut milk, coconut rum, coconut, caramel sauce and brown sugar. I thought the combination sounded heavenly and was whipping up this Frozen Coconut Banana Daiquiri in minutes – literally.

Frozen Coconut Banana Daiquiri

Ingredients

  • 2 large ripe bananas
  • 1/2 cup coconut milk
  • 1/2 cup shredded coconut
  • 3-4 ounces coconut rum I used Blue Chair Bay Coconut Rum
  • 1 tablespoon brown sugar
  • caramel sauce to drizzle

Instructions

  • Combine the bananas, coconut milk, coconut rum and brown sugar in a large blender with 2-3 heaping ice scoops of ice (add more if needed to desired consistency). Blend. Lightly toast shredded coconut in frying pan or toasted oven. Pour frozen coconut banana daiquiri in large glasses and top with shredded coconut and caramel drizzle. Cheers and enjoy.

This drink was just too delicious and the perfect combination of ingredients. The brown sugar, caramel sauce, Blue Chair Bay Coconut Rum and toasted coconut fully complimented the natural sweetness of the banana. It was cool and creamy with nice, warm flavors. 

While this recipe easily serves four, I have to confess, my husband and I enjoyed these by ourselves and each had two.
