This recent blast of winter air hasn’t prevented me from thinking of warmer days and the sun and sand. Perhaps a recent delivery of Blue Chair Bay Rum is to blame for my summer fever.
Today is National Coconut Torte Day and to what better way to escape the winter blues than by celebrating the holiday with a cocktail in hand? My inspiration for my Coconut Lime Cooler cocktail was this delicious Coconut Lime Torte. I loved the idea of combining coconut and lime but wanted to keep the drink on the lighter side. Instead of using coconut milk, I opted for coconut water with coconut pulp and Blue Chair Bay Coconut Rum.
To create this Coconut Torte-inspired Coconut Lime Cooler you need coconut water (I chose one with pulp), lime seltzer, fresh limes and Blue Chair Bay Coconut Rum. Blue Chair Bay Rum is a collection of premium-blended rums by singer-songwriter Kenny Chesney and comes in three varieities: Coconut, Spiced and White Rum.
The recipe for the Coconut Lime Cooler is as follows:
1 oz. Blue Chair Bay Coconut Rum
2 oz. Lime Seltzer
3 oz. Coconut Water
Juice from lime wedge
Lime for garnish
Pour coconut rum over ice in tall collins glass. Add coconut water, lime seltzer and lime juice. Stir and garnish with lime.
The result is a light and refreshing coconut flavored drink which goes down way too easy. I can see myself definitely enjoying a few of these when the weather gets warmer. This is THE PERFECT summer drink.
It’s not too soon to start thinking about summer, Memorial Day is just 77 days away.
