Chunky Bacon Salsa
Bacon and salsa - what can go wrong?

- 8 slices of bacon cooked
- 1 fresh jalapeño pepper chopped (de-seed for less heat)
- 1/2 red onion chopped
- 1/3 cup chopped cilantro
- 1 garlic clove minced
- 2 cups diced tomatoes
- juice from 1/2 fresh lime
- salt to taste
- tortilla chips to serve
Combine chopped jalapeño pepper, red onion, cilantro and garlic clove in a bowl. Fold drained, diced tomatoes into mixture. Crumble cooked bacon slices and add to bowl. Add juice for 1/2 lime and add salt to taste (be careful, the bacon will add a natural salt flavor to the salsa). Test for flavor and add additional salt or jalapeño if you'd like it spicier. Serve with tortilla chips.
