I have not posted anything about my boys’ lunches since the start of the school year about a month ago. I continue to make lunches everyday, sometimes wracking my brain on what to pack. Luckily, I have not had too many lunch complaints and the lunch containers come home empty everyday – for the most part – which is a good sign.
Here’s a sneak peek at what’s in my boys’ lunch boxes today. Make sure you continue reading to the end of the post too, I have an exciting announcement!
“Pumpkin” Quesadilla – Lunch #1
For my older son, I made a cheese quesadilla and cut it with one of my large, pumpkin cookie cutters. I then added small pieces of ham for the eyes, nose and mouth. I held the ham pieces in place with small toothpicks which my son knows to remove before eating. I included baby carrots along the bottom of the “pumpkin” quesadilla for a pop of orange color. I completed the lunch with a bunch of grapes, a big strawberry and peanut butter and graham cracker sandwiches.
Hawaiian Delight – Lunch #2
My youngest son is a picky little bugger. He gives me a hard time when it comes to meals so lunches are a huge challenge. He won’t eat bread, claims to not like cheese (although he will eat it on pizza or shredded) and tends to get filled quickly. So, to compensate, I try to pack him lunches that are flavorful, protein-packed and easy for him to eat.
Today, he has pineapple and ham “kabobs” – he loves pineapple. I then added strawberries, mixed nuts (almonds and dried edamame) and peanut butter and graham cracker sandwiches. I will be interested to see how lunch goes over today and if his lunch box comes home empty (fingers crossed).
