On Sunday I did something I never thought I’d do, I grilled cabbage steaks. As you already know from reading this blog nothing makes me happier than grilling under the hot summer sun. I love the idea of cooking outdoors and experimenting with fresh summer ingredients on the grill. My Summer Grilled Cabbage and Corn started on a whim with a little experimentation.
I began by husking two fresh ears of corn and charring them directly on the grill. I like to brush my corn lightly with olive oil to keep it from drying out and adding a hint of flavor.
I then cut a large head of cabbage into slices 1/2 – 3/4 inch thick to make cabbage steaks. I placed the cabbage steaks directly on the grill grates over medium heat. I brushed the cabbage steaks lightly with olive oil and grilled them until they were lightly charred on each side and the cabbage is soft.
After the cabbage and corn were cooked through, I placed the cabbage on a large serving platter and cut the grilled corn off the ears and sprinkled them on top of the grilled cabbage steak slices. I then drizzled the cabbage steaks and grilled corn with two tablespoons of melted butter and then squeezed juice from half of a lemon on top of the Summer Grilled Cabbage and Corn salad. I finished the Summer Grilled Cabbage and Corn salad with fresh, cracked pepper and a pinch of sea salt.
To serve, garnish the Summer Grilled Cabbage and Corn salad with a small wedge of lemon and some fresh lemon thyme as a garnish. Serve warm.
I couldn’t believe how fantastic this Summer Grilled Cabbage and Corn salad tasted. My entire family enjoyed the flavor and get this – event my little ones ate it up (win!).
I can’t wait to whip up this Summer Grilled Cabbage and Corn salad again. This will definitely be on high rotation this summer.
