So, here’s a little unknown fact about me – I was a vegetarian for nearly seven years. If you are a regular reader of this site you likely noticed I don’t post a lot of meat recipes. Even though I no longer consider myself a vegetarian I still eat a heavy vegetable-based diet. Because of my former vegetarianism, I consider myself a quasi-queen of quick meatless meals.

For my recipe, I chose to share this fantastically satisfying Eggs & Garlic Grilled Asparagus over Grilled Italian Bread. This meal is so hearty and so full of flavor you will not miss the meat at all. Trust me.
To begin, I sliced up some seeded Italian bread on a diagonal, brushed it with olive oil and grilled it on both sides using my favorite stop-top cast iron grill pan. As soon as the bread was toasted on both sides I removed them from the grill pan and set them aside.
I then cut five cloves of garlic in half and threw them on the grill pan along with a large bunch of asparagus. I drizzled the asparagus with olive oil and cooked until the asparagus were slightly soft but still had a little crunch to them. Salt the asparagus with a few pinches of salt as they are cooking. After they were finished I removed them from the pan, separating the asparagus from the garlic and set them aside.
Next, I topped the bread with the reserved grilled asparagus.
To complete the dish I sprinkled it with a pinch of salt, some fresh cracked black pepper and feta cheese (optional). One full loaf of bread and a large bunch of asparagus can serve about three people; each serving should be topped with two eggs. It is one of my favorite quick meatless meals. Honestly, I can’t get enough of this dish.
