I love a good television night. We are an incredibly busy family so I take every opportunity I can to Play. Pause and Refresh with my favorite television shows while cuddled on the couch with my kids and fur babies. Before I get settled in I like to grab my television viewing essentials: Coca-Cola, television remote, my glasses and my phone so I can chat online via popular social media sites while watching my favorite shows.

We are big fans of reality television talent competition shows, anything on the animal-focused networks and I love to binge watch my favorite series from the premium television channels. Lately my family and I have been watching the latest season of the vocal competition that is judged blind. We not only enjoy seeing people share their talents and strive for their dreams, but we also enjoy the banter that happens between the judges. It’s very family-friendly and it’s a show we all can agree on.

  • Using pulled rotisserie chicken
  • Cooking/serving the nachos on a baking sheet for easy clean up
  • Putting a variety of drinks out so you don’t have to do a kitchen run and miss your favorite show

To prepare the Chicken and Mexican Street Corn Nachos I roasted frozen corn in butter over medium heat with chili powder and mayonnaise. While the corn was cooking, I melted the cheese over the tortilla chips and topped with shredded chicken. After the chips and cheese/chicken were melted, I topped the nachos with the cooked corn, cotija cheese and a sour cream-lime mixture before finishing with chopped cilantro.

Chicken and Mexican Street Corn Nachos

Ingredients

  • 2 TBSP. butter
  • 2 cups of fresh or frozen corn
  • 2 tsp. chili powder
  • 2 TBSP. mayo
  • 1 9 oz. bag blue corn tortilla chips
  • 2 cups pulled rotisserie chicken
  • 8 oz. shredded Monterey Jack Cheese
  • 2 TBSP. sour cream
  • 1 lime cut into wedges
  • 1/4 cup Cotija cheese or you can use feta cheese
  • 2 TBSP. chopped fresh cilantro

Instructions

  • 1. Preheat oven to 350 degrees. Melt the butter in a heavy bottomed or cast-iron skillet over medium high heat. Add the corn and chili powder and allow corn to char slightly before stirring. Remove from heat and stir in mayo.
  • 2. Place tortilla chips on a baking sheet in an even layer and sprinkle with chicken and shredded cheese. Bake 7-10 minutes or until cheese is melted.
  • 3. While the chips are baking, whisk together sour cream and lime juice from half of the lime wedges.
  • 4. Arrange tortilla-chicken and cheese mixture on a large serving platter. Top tortilla chips with corn-mixture, cotija cheese and cilantro. Drizzle with the sour cream mixture. Serve with remaining lime wedges.

 These Chicken and Mexican Street Corn Nachos are a fun twist to a Mexican food staple and are the perfect snack for any T.V. watching night. With my first bite, I was immediately transported to the streets of Mexico where I first tasted Street Corn nearly 20 years ago. It was also the place where I had my first sip of Coca-Cola from the bottle and from that moment, Coca-Cola from the bottle is still my favorite way to enjoy the drink.
