Try serving up everyday waffles a different way, eliminating the traditional butter and syrup, and serve them topped with your favorite spread and fruit combinations to make a tasty, finger-food style breakfast.
Think waffles are too fussy to make in the morning for breakfast? Think again! Waffles are super easy to make and just require a little bit of prep the night before. I start with my favorite waffle recipe (hint: I use Bisquick) and make my waffle batter the night before and store it in an air-tight container in my refrigerator. As soon as I wake up in the morning, I plug-in my waffle iron (affiliate link) and let it heat up while making coffee and waking up the kids. Once the waffle iron is heated, I spray it with non-stick spray and pour on my batter. Within minutes, I have four beautifully hot waffles ready to go – but I am not done yet.
To make Breakfast Waffle Bruschetta I simply top the waffles with my favorite spreads (chocolate-hazelnut, peanut butter, cookie butter, marshmallow fluff) and pile on the toppings. I then cut the waffles into triangles for easy eating. Toppings and combinations for the Breakfast Waffle Bruschetta can be changed based on preference. Here are some suggestions based on our favorites:
- Chocolate-Hazelnut spread topped with Strawberries and Blueberries (pictured)
- Peanut Butter topped with Sliced Bananas and Toasted Coconut (pictured)
- Marshmallow fluff topped with Chocolate Chips and Crushed Graham Crackers
- Marshmallow fluff and peanut butter topped with Sliced Bananas (like a fluffer-nutter)
- Cookie Butter topped with chocolate chips or your favorite nut combinations
- Vanilla yogurt topped with Colored Sprinkles (for a fun birthday treat)
The possibilities are really endless. Just find one that works for you and your children and go with it.
Today, I made two versions of Breakfast Waffle Bruschetta.
I made Chocolate-Hazelnut spread topped with Strawberries and Blueberries for my oldest son and the Peanut Butter topped with Sliced Bananas and Toasted Coconut for my youngest son.
Each felt special since they had a breakfast suited to their liking and I had breakfast on the table within minutes. I was the breakfast hero all around!
