Clearly I am thinking all things back to school. With one of my boys already in school and one set to begin tomorrow my mind has shifted from breakfast and lunch ideas to after school snacks.
When my boys return home from school, they are starving. Often, there’s about two hours from the time they return home to our dinner time and they are always looking for something to hold them over until dinner is served. When it comes to after school snacks, I like to offer snacks that are more than just empty calories. I try to stay away from the chips and cookies and serve fruit, vegetables, dairy and proteins to not only satisfy their hunger, but also fuel their brains for after school homework or computer and reading time.
One of my favorite after school snacks are these easy and cute Yogurt Parfait Cones.
Never underestimate the power of an ice cream cone. When I serve up these yogurt parfaits my children think they are getting a treat and yet, they are eating yogurt and fruit (or cookie). These parfaits couldn’t be any easier and I just love the way they look. They are such a fun snack.
To make these Yogurt Parfait Cones simply choose your favorite style ice cream cone (we chose sugar cones) and create layers within the cone of yogurt and fruit/cookie. For this batch of Yogurt Parfait Cones I offered a banana-raspberry combination and a cookies and creme option.
It’s best to serve these immediately as the cone will begin to soften from the yogurt over time.
I like to make these Yogurt Parfait Cones for after school snacks, for breakfast or even as a replacement over traditional dessert-type foods. These would also be really cute as a birthday party activity. You could create an entire yogurt bar and instead of offering bowls, offer ice cream cones, and complete the yogurt bar with a variety of fun toppings.
