Today’s post is brought to you by the great folks at Eggland’s Best and features Hummus Deviled Eggs.  I have always been a fan of deviled eggs and we blow through hummus in this house.  Marrying the two seemed so natural as the creamy texture of the hummus resembles the filling for the traditional style deviled eggs.  This recipe is unique in that I combine both the egg yolks and the hummus to create a protein packed snack with an non-traditional flare.     

To begin, I hard-boiled six eggs.  My absolute fool-proof way to boil eggs is to set the eggs in a single layer in a pot.  Bring the water to a full, rolling boil and cover the pot. Turn off the stove and remove the pot from the burner and let it sit covered for about 10 minutes.  Drain the pot and submerge the eggs in cold water to stop the cooking process.   Peel the eggs.

I then separated the yolks from whites.  I placed the whites on a platter and tossed the yolks in a bowl.  I then added the hummus and other ingredients and mixed to incorporate.

Hummus Deviled Eggs

A yummy appetizer or snack

Cook Time5 minutes

Ingredients

  • 6 hard-boiled egg yolks
  • 6 reserved hard boiled egg whites
  • 3 tablespoons garlic hummus homemade or store-bought
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon of grey poupon mustard
  • 1/2 teaspoon lemon juice
  • pinch of salt
  • parsley for garnish
  • pita chip for garnish

Instructions

  • Combine ingredients in a bowl except for the garnish. Fill reserved egg whites with hummus-yolk mixture. Garnish with parsley and pita chip.
