I admit white wine is not my favorite. I am definitely more partial to red wine varieties but in the summer months red wine can feel a little heavy. I had a couple of bottles of white wine chilling in my refrigerator plus a bounty of fresh strawberries so I decided to combine the two to make a Strawberry White Wine Slush.

To begin making the Strawberry White Wine Slush I hulled some fresh strawberries (which are absolutely divine this time of the year) using my favorite OXO Strawberry Hulller.  Seriously, I am obsessed this thing; best invention ever!

Once the strawberries were hulled I decided to make a fresh strawberry syrup to use later for the Strawberry White Wine Slush.

The fresh strawberry syrup is great for cocktails and desserts. It is so simple to make. I will detail the process in the recipe below but you basically cook down the strawberries with some sugar. The fresh strawberry syrup can be stored for up to two weeks in a ball jar in your refrigerator.

Once you have the syrup ready, you combine it with your favorite white wine and some ice to make a large batch of Strawberry White Wine Slush drinks to enjoy on a hot summer day.

Strawberry White Wine Slush

Prep Time10 minutes
Cook Time5 minutes
Servings: 4

Ingredients

  • 1 pint fresh strawberries you can also use frozen
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 2 cups of white wine pinot grigio, moscato or chardonnay
  • 2 cups ice cubes may need to add more to reach desired consistency

Instructions

  • Wash strawberries and remove stems, cut large berries in half.
  • Combine strawberries, sugar and vanilla in saucepan. Cook over medium heat, stirring regularly. Mash strawberries as mixtures boils to break down strawberries. Cook for about 10 minutes until sauce thickens. Allow to cool.
  • In a large blender, 3-4 tablespoons of cooled strawberry syrup, 2 cups of white wine and ice cubes. Blend until combined and a slushy consistency has formed. Serve in a wine glass and garnish with a fresh strawberry.
The strawberry mixture has hints of vanilla and natural sweetness of the strawberries. When combined with the white wine you have a deliciously refreshing summer wine cocktail perfect for dinner parties, sip by the pool or a late afternoon cocktail.
