This post started when I found these adorable egg cups at a thrift store. There were four in the set and they were perfect, with no imperfections. I immediately knew I wanted to make a soft boiled eggs breakfast for my Valentine and showcase these adorable egg cups.
Valentine’s Day has always been a favorite holiday of mine and this year is no exception. My husband and I are celebrating our 15th wedding anniversary (we were married just days before Valentine’s Day) and the GGG boys are celebrating their birthdays. February has always been OUR month and how fitting that it is also the month to celebrate love. We feel very fortunate to have so many moments of love and celebration clustered across four days.
Now, back to this cute breakfast …
A soft boiled eggs breakfast is something that feels fancy but is totally easy to make. The key to the perfect soft boiled eggs is to keep a close eye on the timer and have everything ready so as soon as the soft boiled eggs are ready you can dig right in.
To complete the soft boiled eggs breakfast, I like to serve the eggs with steamed asparagus, crispy bacon (I made turkey bacon) and some strands of arugula for added greens. Paired with a nice cup of coffee and you have a deliciously satisfying breakfast that wows the crowd.
- 2 eggs
- handful of steamed asparagus
- 2-3 pieces of crispy bacon
- arugula (optional)
- salt and pepper
- Lower the egg into gently boiling water with a slotted spoon. Allow the egg to boil for 4-6 minutes. Soft boiled eggs take a little trial and error and are dependent on the strength of your stove, the pot you are using and the size of your egg. I have found that on a gas range, using a heavy pot, it takes about 6 minutes to soft boil and large egg. After six minutes the yolk will be runny and the white just set. Cook for a further minute if you like your soft boiled eggs a little firmer.
- To open the egg, tap a spoon once or twice around the center of the egg. Crack the shell open and use a small spoon to scoop the egg from the shell. Dip the apparatus and bacon into the soft boiled eggs.
So surprise your Valentine with this soft boiled eggs breakfast and make them feel like they are dining in an adorable bed and breakfast, yet they are in the comfort of their home.
