I’ve been in a hermit state for the past several weeks as I cherished the last few weeks of Summer and all of its wonderful gifts. Fast forward to Fall and here we are today, where the temperature has barely broke 60. We are certainly in the season of sweaters, boots, scarves, pumpkin, warm drinks and cuddling. Hello, Fall.
We are huge fans of this season in my house – despite my horrible seasonal allergies – and especially love all of the pumpkin flavored treats floating around. One of my favorite things to enjoy are those high-end pumpkin coffee drinks. I don’t always like going to the coffee shop to grab them so I came up with a very EASY way to make a pumpkin coffee drink/treat inspired by those fancy coffee shop ones – a Pumpkin Spice Affogato.
This two-ingredient drink is so simple to prepare, almost as simple as it was to make the Shutterfly Photo Mug featured in this post. There’s no secret, I am a huge dog lover and sadly, my little B is getting older and older each day. So when Shutterfly invited me to create a keepsake mug, and give two away to my readers, I immediately knew I wanted a mug that celebrated my two furry best friends, Bentley and Gizmo. Truthfully, they love Fall just as much as my family does. They love to cuddle and sport their warm, little sweaters and they love pumpkin too.
To create the mugs, I simply loaded some of my favorite doggy-faced shots into one of Shutterfly’s pre-designed templates. I chose the dog-themed one: “All You Need is Love … and a Dog.” I saved my creation and within days it arrived on my doorstep. I use it every morning for my coffee now and used it just the other day to make my Pumpkin Spice Affogato.
To make the Pumpkin Spice Affogato I used two ingredients: Pumpkin Pie Ice Cream and Pumpkin Flavored Coffee.
I began by placing two large scoops of pumpkin flavored ice cream in my mug. All of the stores around my area are serving versions of this ice cream now as a limited time flavor. I would look for one that does not have chunks of graham cracker crust in it. I think the smoother ice cream works best.
I then topped the ice cream with hot, pumpkin flavored coffee. If you want to serve this as more of dessert, only fill the cup or dish half way with coffee. For more of a drink, like how it is served here, fill the cup up to the top with coffee. The ice cream melts to create a cream-like finish to the coffee and the sweetness of the ice cream makes it taste sweet.

- 1 cup hot pumpkin flavored coffee
- 2 scoops pumpkin pie ice cream
- pumpkin pie spice for sprinkling
- Fill cup or dish with two scoops of pumpkin pie ice cream.
