It’s confession time! When I was in college I lived off of boxed noodle mixes. I wasn’t the best cook back then and it was an easy, go-to comforting meal. Now that I have a family I see the appeal of creating those same, one pot comforting meals. I don’t like to serve my family something from a box so I channeled my inner college student and created a One Pot Taco Noodles dish.
One Pot Taco Noodles
When it comes to one pot meals I aways have a secret weapon in my pantry, No Yolks noodles. No Yolks are incredibly versatile. No Yolks isn’t just for stroganoff or casseroles. They can be used in soups like Miso and French Onion or in more creative dishes like Sriracha Cheesy Noodles and Noodles with Kale and Walnut Pesto.
For the One Pot Taco Noodles dish I started by cooking chopped onion and garlic in a lightly oiled pan. Once the onion and garlic was translucent I added the ground beef and cooked it until browned. As the beef browned I then added taco seasoning mix. Next, I added 2 cups of beef broth and allowed the noodles to cook in the broth along with the browned beef for about 15 minutes until the noodles were tender.
During the final moments of cooking I added 1/2 cup of shredded Mexican blend cheese.
To serve, I topped the One Pot Taco Noodles with chopped red onion, chopped tomatoes, shredded cheese, sour cream, hot sauce and cilantro.
- 1/4 cup chopped onion
- 2 garlic cloves, minced
- 1 tbsp oil
- 1 pound ground beef
- 1 package No Yolks broad noodles
- 1 packet taco seasoning
- 2 cups beef broth
- 1/2 cup shredded cheese
- Toppings (optional): chopped tomatoes, chopped onions, sour cream, hot sauce, chopped cilantro
- Add oil to large pan. Add chopped onion and garlic and cook until translucent. Add ground beef to pan and cook until browned. Add taco seasoning packet and combine. Add No Yolks broad noodles and beef broth. Cook until broth is absorbed and noodles are tender. Add shredded cheese. To serve, top with toppings of your choice.
