I grew up in a Puerto Rican household but married a Mexican man. I wanted to impress him with my cooking when we first were married and one of the first dishes I tried to wow him with was Michoacan Beef (Mexican Beef Stew). From that moment on he was mine.
Many authentic Hispanic dishes call for the use of tomatoes, and Hispanic women are known for using fresh, natural, quality ingredients when they cook for their families. Cooking with fresh, natural and quality ingredients are a way of life for Latinas, a tradition passed down from their mothers and their grandmothers.
I can recall watching my mother-in-law cook when my husband and I first married. She often used tomato sauce in nearly all of her recipes and had an affinity towards Hunt’s Tomato Sauce. I began my Michoacan Beef Stew recipe using Hunt’s Tomato Sauce and Hunt’s Diced Tomatoes.
I dredged my stew meat in flour before browning over medium heat. I then added the onions, garlic, tomato sauce, tomatoes, stock and chipotle peppers and allowed to cook over medium to low heat for about 2 hours. At the final stages of cooking, I added the fresh green beans until cooked and serve the finished dish with a fresh tortilla.
Michoacan Beef Stew is a favorite when the weather starts to cool. My husband says the Michoacan Beef Stew closely resembles a childhood favorite meal of his, carne con chile (beef with spicy sauce).
- 3 tablespoons all-purpose flour
- 2 pounds stewing beef cut into bite-size pieces
- 2 tablespoons vegetable oil
- 2 onions, chopped
- 6 garlic cloves
- 14 oz. can Hunt's tomatoes, diced
- 1/2 cup Hunt's tomato sauce
- 2 chipotle peppers, in sauce. Sliced thin
- 6 cups beef stock
- 12 oz. green beans
- salt and pepper to taste
- Dredge stewing meat in the all-purpose flour and season with salt and pepper. Shake additional flour off of meat. Heat oil in a large, deep skillet or pot and brown meat. Add onions, garlic and cook for 2 minutes. Add the tomatoes, tomato sauce, beef stock and simmer over low heat for 2 hours. Add green beans towards end of cooking. Skim off any fat. Transfer to individual bowls and serve hot.
