I’ve got another guest post on the blog for you guys today.  My friend, Trina of O’Boy Organic is sharing her favorite Homemade Lemonade with Mint with all of you.  Trina is all about sharing recipes and ideas to help you create healthy, tasty, fresh, organic meals for your children. You may not know this but I made all of my boys’ baby food and found great pleasure in personally preparing their pureed foods and actually thought it was cheaper than buying the jarred stuff.  Even today I focus on making nearly everything homemade and fresh lemonade is one of our most favorite make-it-at-home recipes.  Today, let’s give a great GGG welcome to Trina as she shares her Homemade Lemonade with Mint  recipe.

Homemade Lemonade with MintWe always have lemon and mint on hand because I enjoy drinking warm lemon water in the morning, and one of the easiest things for my son to make on his own is homemade lemonade. He can easily do everything on his own, even the clean up! I’ve always encouraged my kids to get into the kitchen and cook with me, and I’d rather have them make their own sweet treats then buy something artificial. Store bought lemonade can be so sweet and also have added ingredients like high fructose corn syrup, corn starch, glycerol ester of rosin and aspartame – YUCK! No one should want in their bodies. This batch of homemade lemonade is big, perfect for a party or even a lemonade stand.

Homemade Lemonade with Mint

Ingredients

  • 1 ½ cups of fresh squeezed lemon juice about 24 lemons
  • 2 cups of raw sugar
  • 10 cups of water
  • Lots of ice to fill the container
  • Fresh mint leaves

Instructions

  • 1. Cut and squeeze all the lemons over a colander into a bowl. This way you don’t get the pulp or seeds in the juice.
  • 2. Once the lemons are all squeezed put juice in a measuring cup and set aside
  • 3. In a small saucepan put 2 cups of raw sugar, 2 cups of water and 3-4 sprigs of mint together and bring to a simmer. Once the sugar is dissolved remove from heat. Make sure you discard the mint before adding it to the lemonade mixture
  • 4. Take about 10-15 mint leaves and cut up into smallish pieces
  • 5. In a large pitcher or Drink Dispenser put ice in, use a lot since the lemon juice and simple syrup are both warm.
  • 6. Pour in the lemon juice, 8 cups of water, 2 cups of simple syrup and fresh mint. Stir and

Trina's Tip: To kick it up a notch “adults only” add a bit of vodka, my favorite is Grey Goose Le Citron. ENJOY!

Trina recommends using this drink dispenser for serving the lemonade which I love.  I think the dispenser adds a casual, laid back feel to this lemonade.
