A couple of weeks ago I hosted a Twitter party to talk all things plantains. During the chat I couldn’t help but remember a delicious Grilled Plantains Banana Split dessert I had while traveling to California. I knew I would have to replicate the dessert soon; my sweet tooth was begging for it and we all know when the sweet tooth calls you must answer.
Here is what you will need to make the Grilled Plantains Banana Splits (serves 2):
- 2 fresh sweet plantains, cut in half lengthwise
- 6 pineapple slices
- Ice Cream (I used Chocolate, Vanilla & Strawberry)
- Strawberry dessert topping
- Chocolate Syrup
- Sweet Plantain Chips, crushed
- Marsachino Cherries
For this Grilled Plantains Banana Split recipe I grilled up pineapple slices (you can use fresh or canned) and fresh sweet plantains. If you haven’t gotten into the habit of grilling your fruit you need to start doing so now. Grilling fruit extracts its natural juices and brings out a whole new dimension of flavor. For added flavor I sprinkled my pineapple and plantains with a sugar-cinnamon mixture (equal parts). The sugar-cinnamon caramelizes on the pineapple and plantains and creates a nice, sweet crust on the outside.
As soon as your plantains and pineapple are grilled allow them to cool for about 10 minutes. After they have cooled you can begin assembling your dessert. I used a large cocktail glass and placed one grilled pineapple slice on the bottom of the glass. I then cut the grilled plantain slices in half and placed three pieces along the back of the glass and topped the pineapple slice with a layer of crushed sweet plantain chips.
Once your base layer is assembled you can top with ice cream and then continue building your Grilled Plantains Banana Split as you wish. I alternated with pineapple slices, crushed plantain chips, strawberry topping, chocolate sauce and ice cream. I finished it with crushed plantains, a pineapple slice and a maraschino cherry on top.
With one taste I was immediately taken back to my time in southern California.
