The last few days of Summer are coming to an end. I’ve decided to do everything in my power to take it all in and enjoy these last few days savoring Summer and seeking adventure.
The skies have been absolutely breathtaking lately. The sunsets have been too beautiful to not soak in so we decided to eat dinner outside the other night while enjoying a foil pack salmon on the grill which we paired with The Seeker wine.
I might be a little biased, but isn’t this simply gorgeous? I love Jersey sunsets. The Seeker wine was a great choice for my sunset adventure because with this brand it is all about the journey – and this Summer has certainly been one for the record books. We’ve spent countless hours at the beach, spent quality time with family and friends and sang to some of my favorite songs at two major Summer concerts. It’s been the kind of Summer that memories are made from.
To begin my sunset-inspired meal I prepared several small pieces of foil with coconut oil and lemon. I then stacked fresh slices of squash and zucchini on top of the lemon slices before topping with a fresh piece of salmon, which I seasoned with salt and pepper, before finishing with fresh green beans and tomato slices. I also added a pinch of dried lemongrass per packet, but this is totally optional.
I then folded up the foil packets, creating a small steam pack which was then placed on the grill. The foil packs cooked on medium heat for about 30 minutes of the grill. To serve, I took the salmon and vegetables out of the pack and paired it with a buttery Israeli couscous, fresh lemon and The Seeker wine. It couldn’t be simpler.

- 4 - 6 ounce salmon fillets
- 1/4 cup coconut oil
- 8 lemon slices
- 12 slices zucchini and squash
- 16 fresh green beans
- 4 tomato slices
- Brush foil pieces with coconut oil. Place two slices of lemon on foil and top with slices of fresh zucchini and squash (about 3 slices each). Place each piece of seasoned salmon on top of lemon, zucchini and squash slices. Top with fresh green beans and a tomato slice. Wrap up salmon tightly in the foil packets and place on grill. Cook on medium heat for 30 minutes. Serve with your favorite side.
It’s easy to get wrapped up in the chaos of everyday, forgetting to pause and appreciate the beauty and wonder that surrounds you.
