Easter is just days away and I am busy here at the GGG house preparing for a fun-filled weekend with my little bunnies. The GGG boys have been on Spring Break this week so they have just a few days left to enjoy their mini vacation before getting back into the spring of things on Monday.
This is the first year where the boys aren’t overly excited for Easter. They haven’t asked to visit the Bunny and my youngest decided he didn’t want to go to school to attend his school Easter party (he was on Spring break but could attend the party). Maybe it has something to do with this photo from when they were babies. Scarred much?
It is kind of sad. I can see my boys getting older each day. So much of me is trying to savor these days and remember, no matter how hard some of our days may be, it is only for a moment of time and this to shall pass.
If the rain holds out today we are heading to an egg hunt that ends with a bunny skydiving out of an airplane. If a skydiving bunny doesn’t spark some excitement this year I don’t know what will. Of course, we will also decorate some Easter eggs. I can cook a ton of foods without fail but there are times when I can’t boil an egg to save my life.
Through the years I have tried several methods and these are my most tried and true methods. The boiling water method and the oven baking method. Both make great eggs but note that the baking method definitely alters the flavor slightly.
We will head to church and then have a low profile Easter dinner at home. The menu includes salad, crispy herb fingerling potato, brussels spouts with bacon, ham, baked turkey breast and biscuits. For dessert I have a carrot cake (my favorite) and a german chocolate pudding cake. As for the cocktail, we will be sipping on my “famous” Peep-Tini Easter Martini (everyone loves them).
Of course, after Easter they will be plenty of leftovers including hard-boiled eggs, ham and turkey. I have some great suggestions for leftovers including my Hummus Deviled Eggs, Leftover Ham, Rice and Beans or my friend, Colleen’s Savory Ham and Cheese Waffles
Stay tuned for another packed week on GGG. I will dishing up two cocktails (one to kick off Baseball’s Opening Day) and a couple of delicious recipes. I just confirmed my 2015 CSA participation so I am excitedly looking forward to lighter meals and healthier fare. Time to start thinking Summer!
