I just love when inspiration strikes me when I least expect it.

I had spent most of this past Sunday in the kitchen – making brunch for friends earlier in the day and then prepping Sunday dinner for my family. There was a moment when I was all caught up and was just milling around in the kitchen when inspiration struck. Bacon. Salsa. What if I tried to make a chunky bacon salsa recipe? 

I reached into my refrigerator and grabbed some Farmland® bacon, a jalapeño pepper, cilantro, red onion, garlic, lime and canned diced tomatoes. Normally I would make salsa with fresh tomatoes but I just don’t find them to be very flavorful in the winter so diced tomatoes in the can are the way to go for me this time of the year. 

You might remember, a while back, I made a different recipe using Farmland® bacon, my Patatas Bravas con Bacon (Spicy Potatoes with Bacon). I love working with Farmland® bacon because it is slow smoked over real hardwoods for maximum flavor. For this chunky bacon salsa recipe I decided to bake slices of bacon in the oven on a roasting pan. I absolutely love baking my bacon and have been doing so for years. It is such an easy way to cook bacon – and less of a mess too!

While the bacon was baking, I chopped the jalapeño pepper, garlic clove, onion and cilantro. I also drained the diced tomatoes of their juices from the can so as to not make the chunky bacon salsa too watery.

Once the bacon was cooked I broke it up into bite-sized pieces and combined it with the other ingredients to make a delicious chunky bacon salsa. I couldn’t wait to grab some chips and give it a try. 

It was love at first bite – how did I not think of this before?! The perfect quick bite for game time (hey, March madness is here) or anytime for that matter. Don’t believe me? Take a look for yourself.  That’s a bunch of crispy, chunky bacon right there.

Chunky Bacon Salsa

Bacon and salsa – what can go wrong?

Ingredients

  • 8 slices of bacon cooked
  • 1 fresh jalapeño pepper chopped (de-seed for less heat)
  • 1/2 red onion chopped
  • 1/3 cup chopped cilantro
  • 1 garlic clove minced
  • 2 cups diced tomatoes
  • juice from 1/2 fresh lime
  • salt to taste
  • tortilla chips to serve

Instructions

  • Combine chopped jalapeño pepper, red onion, cilantro and garlic clove in a bowl. Fold drained, diced tomatoes into mixture. Crumble cooked bacon slices and add to bowl. Add juice for 1/2 lime and add salt to taste (be careful, the bacon will add a natural salt flavor to the salsa). Test for flavor and add additional salt or jalapeño if you’d like it spicier. Serve with tortilla chips.

  1. LOVE!! So funny, I have a half dozen recipes sketched out for CA Avocados…the first one says Fried Avocados with Bacon Chutney or Bacon Salsa?? Great minds think alike! I would eat this whole bowl…BACON!!!
