Chunk Light Tuna Wonton Tacos

So, here’s the deal. I love Taco Tuesdays – like a lot. But I don’t love the number it does on my waist line. In the theme of New Year, New You and my quest for a better, more improved GGG, I decided to turn my love of Taco Tuesdays into Tuna Taco Tuesdays with these better-for-you Chipotle Chunk Light Tuna Wonton Tacos with my favorite Bumble Bee® tuna.

I always have a select supply of canned goods and products in my pantry, ready for those moments when I need a go-to meal. Available in can or pouch, each Bumble Bee® product is an easy and delicious way to add a variety of nutrients to your diet, including lean protein, healthy fat, and important vitamins and minerals. Tuna can be used in sandwiches, salads, in main dishes or as a unique appetizer or light snack like my Chipotle Chunk Light Tuna Wonton Tacos.

To begin, I gathered my main ingredients and some wonton wrappers, cole slaw mix, cilantro, avocado and sesame seeds.

I began by turning my wonton wrappers into “tacos” by crisping them in a 350 degree oven. My “trick” is to spray a raised baking pan with cooking spray and laying the wonton wrappers over the side on the pan to create a triangle banner-style look over the pan.

While the wonton wrappers were baking, I mixed the tuna, chipotle peppers and mayonnaise together for the tuna taco filling.

tuna wonton tacos2Once the mixture was prepared and the wrappers were baked crisp, I filled each “taco” with a small layer of cole slow mix, topped the mix with tuna, garnished with cilantro and added a small chunk of avocado. To finish, I sprinkled sesame seeds over the tacos. The result is a deliciously satisfying way to participate in Taco Tuesday but with a healthier twist. 

These Chipotle Chunk Light Tuna Tacos are a nice addition to a dinner party to celebrate the new year or maybe even a lighter option for those indulging in some extra eating on the day of the “big game.” 

Chipotle Chunk Light Tuna Tacos

A unique twist for Taco Tuesdays

Ingredients

  • 2 cans chunk light tuna
  • 2 tbs mayonaise
  • 1 -2 tb chipotle peppers finely chopped (depending of how spicy you want them)
  • 20 wonton wrappers
  • 1 cup cole slaw mix
  • bunch of cilantro
  • 1 avocado
  • 3 tbs sesame seeds

Instructions

  • Preheat oven to 350 degrees. Spray baking pan with cooking spray. Drape wonton wrappers along outside of pan. Bake in oven 10 minutes until brown and crisp. Mix tuna mixture in bowl by adding two cans of drained tuna, mayonnaise and chipotle peppers. Mix well. Chop cilantro. Cut avocado into small chunks. Fill each baked wonton with a small amount of cole slaw mix, top with tuna, cilantro and avocado and finish with sesame seeds. Serve and enjoy

Notes

For extra heat, add additional hot sauce to each taco.
