I still can’t believe Easter is next week. I don’t know, maybe it’s just me, but shouldn’t Easter be in April? Something about Easter in March just doesn’t feel right. To help kickstart my Easter spirit the GGG boys and I gathered in the kitchen this morning and whipped up some Bunny Rabbit Pancakes

The boys are on Spring Break this week so our mornings are a little easier. To spark a little Spring fever I thought it would be fun to surprise them with a cute breakfast to get them excited for their break and the upcoming holiday.  What could be more fun than Bunny Rabbit Pancakes , especially with Easter just around the corner? 

The magic of these Bunny Rabbit Pancakes lies in the cutting and preparing and not so much in the actual pancake recipe. You can use your favorite pancake recipe, or even the boxed mix or frozen variety (I prefer the homemade kind but hey, we don’t judge here, ok?). The fun of dish is truly watching the bunny come to life as your turn a regular pancake into a rabbit and then decorate it with fresh fruit and marshmallows. 

To begin, the GGG boys mixed up our favorite pancake recipe.

We then made three large, round pancakes and removed one of the pancakes from the pile. We cut one of the pancakes into three sections, as shown in the image below, to create two ears and a bowtie.

Once the ears and bowtie were cut, we assembled the pancakes by placing two pancakes on top of each other, placing the bow section underneath and sticking the ears in between the two round pancakes.

We then added the eyes, nose and teeth. We used blueberries for the eyes, a cut strawberry half for the nose, mini marshmallows for the teeth and an M&M for the bowtie button.

The boys were thrilled with how they Bunny Rabbit Pancakes turned out and couldn’t wait to dig in.

Bunny Rabbit Pancakes

A fun breakfast for Easter

Ingredients

  • 3 pancakes
  • 2 blueberries
  • 1 halved strawberry
  • 2 mini marshmallows
  • 1 M&M

Instructions

  • Stack two pancakes on a plate. Use a table knife or kitchen scissors to cut one of the pancakes into pieces for the ears and the bow tie. The two outside pieces are the ears and the inner piece is the bowtie (see photo). Arrange the ears and the bowtie around the stack of pancakes so it looks like a bunny rabbit. To make the bunny’s face, put the two blueberries on the top pancake where the eyes should be. Put the strawberry where the nose should be and place the mini marshmallows right under the strawberry nose. Place the M&M in the middle of the bowtie.
