Recently my husband and I made a pretty significant change in how we eat. We decided to try and stop eating glutens and switch to a modified paleo diet. If you’re not familiar with a paleo diet it’s a diet that focuses primarily on protein, fruits and vegetables and eliminates all processed foods, starch, glutens and dairy. We had been on this diet for a while many years ago and both of us felt it was time for e change for health reasons and to try and lose some weight. I’m a big starch loving girl so pretty much ever meal always had to have a starch (if starch wasn’t the main ingredient! itself!) I love pasta, noodles, bread and really wasn’t sure I’d be able to eliminate these out of my diet. 
 
It’s actually been going really well and my husband and I have both lost weight and feel better overall. Believe it or not, in very short time (about 5 weeks) I’ve lost 14 lbs. Crazy right??? This is pretty much exactly what I had hoped to accomplish from a diet like this as I had gotten to a weight that I was when I was pregnant with my first daughter (yikes!). My clothes were barely fitting me and I just felt unhealthy. In addition to the weight loss, my overall digestive health seems much improved and I just feel better from not eating so much gluten and processed foods. 
 
While it’s been a great diet with fairly quick results already, finding and preparing meals that we can eat on this diet can be a challenge – especially at breakfast! Breakfast or I should say specifically weekend breakfast, is always one of my favorite meals of the day. I love to make pancakes, french toast or a big breakfast with toast muffins or biscuits. But when you’ve eliminated starch and gluten and even regular white potatoes (white potatoes are not ok on the paleo diet) coming up with a big satisfying breakfast can be tricky. 
 
This recipe for a delicious egg breakfast using shredded sweet potatoes and a little kick with the addition of jalapeños is so super easy and absolutely delicious too! I like to make this on a Sunday as my “big breakfast” – it’s so satisfying and yummy to eat. If your kids are adventurous eaters (mine aren’t) try reducing or eliminating the jalapeño and see if your littles will enjoy it, too! 
 
This Paleo-Friendly Eggs Over Easy with Jalapeño Sweet Potato Hash recipe begins with a few simple ingredients.

Paleo-Friendly Eggs Over Easy with Jalapeño Sweet Potato Hash

Prep Time5 minutes
Cook Time5 minutes

Ingredients

  • 2 eggs
  • 1 sweet potato - peeled
  • coconut oil Coconut oil is used often as a "good" fat on the paleo diet. If you don't have coconut oil you could use butter or vegetable oil too
  • jalapeño jarred or fresh

Instructions

  • 1. Shred the sweet potato with a box grater or food processor. You don't want to shred on the finest cut but regular grated cut is best.
  • 2. Put a little of the coconut oil in the pan and heat You could use a cast iron skillet here if desired.
  • 3. Add shredded sweet potato to warm pan and cook on medium for about 15-20 minutes or until sweet potato is light brown.
  • 4. Add jalapeño to sweet potato. How much you add is up to your heat tolerance. I add about a teaspoon of jarred diced jalapeño if using fresh, use less.
  • 5. In a separate pan, cook eggs over easy.
  • 6. Add eggs on top of the sweet potato hash and serve!

Notes

Makes one serving. Double if you're making eggs for two

Easy right? And so delicious and filling!
