It’s no secret I’ve been on a whole foods journey for several months now in an effort to cut my sugar addiction and lost weight along the way. One of the ways I have learned to keep in line with a whole diet is to take on some food preparing techniques  from the Paleo method. This super simple 2-minute Paleo Tuna Salad couldn’t get any easier. To begin, I gathered my ingredients: 1 can of Bumble Bee® Solid White Albacore Tuna, 1 avocado, 1/2 ripe tomato, green onions and sweet peppers.

I mashed the avocado and combined it with tuna, chopped tomato and chopped green onion to create a luscious tuna salad. I also added a handful of sunflower seeds to the tuna salad, but this step is completely optional.

Once the ingredients were combined, I then sliced the tops of the sweet peppers off, scooping out the seeds from the inside, and then stuffed them with the prepared paleo tuna salad.

A Paleo-friendly tuna salad recipe

Ingredients

  • 1 can Bumble Bee Solid White Albacore Tuna
  • 1 avocado mashed
  • 1/2 tomato chopped
  • handful of sliced green onions
  • sweet peppers sliced and scooped out.
  • 1 tbsp sunflower seeds optional
  • salt and pepper to taste

Instructions

  • Combine tuna, avocado, tomatoes and onions together. Add sunflower seeds, if using. Season with salt and pepper. Stuff prepared peppers with a small amount of tuna salad. Serve and enjoy.
